Mix your apples. Granny Smith alone is sharp and holds its shape; Honeycrisp or Gala alone turns soft and sweet. Half and half gives you both.

Browning the butter takes four extra minutes and is the reason people ask for the recipe.

Ingredients

Steps

  1. Step 1: Heat the oven to 375°F. Peel, core and slice the apples about 1/4 inch thick.

  2. Step 2: Toss the apples with lemon juice, 1/4 cup brown sugar, cinnamon and cornstarch. Spread them in a 12-inch cast-iron skillet.

  3. Step 3: Melt the butter in a small pan and cook until it smells nutty and turns light brown, about 4 minutes.

  4. Step 4: Stir the oats, flour, 1/2 cup brown sugar and salt into the butter until clumpy. Scatter over the apples.

  5. Step 5: Bake 40 minutes, until the top is deep golden and the juice bubbles at the edges. Cool 15 minutes before serving.
